Wine & Food Pairings

1.  时菜班球 ($8.95) 配1999 Riesling Kabinett, Schloss Schonborn ($17.95)
This is a parallel tasting: matching the light fish texture with a light German Riesling.  Because Chinese cooks always use sugar in their cooking, I chose a Kabinett instead of an extra dry white.

Schloss Schonborn is one of the biggest RHEINGAU Estates based at HATTENHEIM.  It produces full flavoured wines which are variable.

Kabinett is the term used for the lightest category of natural German wines. It is low in alcohol (RIES averages 7-9 %) but capable of sublime finesse.  It can be unsugared or slightly sweet.

2. 烧鸭 ($9.30) & 2006 Pinot Noir, Domaine Carneros, Sonoma, California ($34.95)
This & the next red wines are called contrast tasting: cutting the greasiness of the duck with the  acidity of the pinot, whose flavor & texture also contrast that of the Chinese roast duck.
Carneros Creek is famous for its focus on Pinot.  Its lightheartedly fruity Fleur is a better match to the烧鸭 than a regular red Burgundy。Its well-oaked Reserve and estate bottlings are even better than the Domaine above, but they are well beyond our present budget.

3. 卤水墨鱼 ($11.35) & 2006 Bourgogne, Domaine Cote De Beaune ($17.95)

墨鱼 is more chewy & blander than the duck, so I chose a fuller body but lighter-palate red burgundy to contrast with it.

Beaune is the historic wine capital of Burgundy. Wines are middle-ranked classic burgundy.

  1. 时菜班球 sounds very delicious, but who made the dish? Was it ‘home made’ or bought from a restaurant? What brand is the 班球 – different brands have different textures.
    Where would the best 烧鸭 be available for $9.30? Just for the leg or half only?
    Who is ‘I’? Just for curiosity, though I know I’m not welcome to join in.

  3. Please accept my apologies for the missing details. The report was supmitted to the participants of the trial event without knowing that it would eventually land in the blog of a public forum.

    Ms. Chan:

    Foods were purchased from the closest mall: 鸿运商场-金点小炒 + 新新烧腊。The duck was half. The groupa was frozen fillet. They were chosen for their general texture, degree of sweetness & greasiness to match or contrast special characteristics of the wines.

    Food price estimation was based on the number of ounces of wine per participant multiplied by the number of morsels per wine.

    This was then translated into the amount of food to be purchased. I also looked at the size of a dish of 时菜斑球before hand.
