Chenin is known for its refreshing acidity, thereby making it a fine candidate for cellar maturation. Some Vouvray have been known to last for 50 years or more, but you can try them earlier than that &#8211; give this one a more conservative 2-4 years due to more approachable styling. You will, however, also get great pleasure with this highly versatile wine now if you pair it with grilled prawns, vindaloo chicken or other spicy South Asian dishes. Bright violet in the glass with an intense nose of cherry, cassis, spice, and toast. Dry with good, well balanced tannins, cherry and black fruit on the palate. On a hillside overlooking the town of Capian and the famed Garonne river, Ch\u00e2teau La Ch\u00e8ze was built in 1515. The Ch\u00e2teau is now home to a small family-owned winery, with 15 hectares of the 30-hectare property under vine. This 2005 vintage won a Gold Medal at the 2007 Concours G\u00e9n\u00e9ral Agricole in Paris.
