Food Pairings<\/h3>\n<p>1.\u00a0 \u65f6\u83dc\u73ed\u7403 ($8.95) \u914d1999 Riesling Kabinett, Schloss Schonborn ($17.95)<br \/>\nThis is a parallel tasting: matching the light fish texture with a light German Riesling.\u00a0 Because Chinese cooks always use sugar in their cooking, I chose a Kabinett instead of an extra dry white.<\/p>\n<p>Schloss Schonborn is one of the biggest RHEINGAU Estates based at HATTENHEIM.\u00a0 It produces full flavoured wines which are variable.<\/p>\n<p>Kabinett is the term used for the lightest category of natural German wines. It is low in alcohol (RIES averages 7-9 %) but capable of sublime finesse.\u00a0 It can be unsugared or slightly sweet.<\/p>\n<p>2.\u00a0\u70e7\u9e2d ($9.30) &amp; 2006 Pinot Noir, Domaine Carneros, Sonoma, California ($34.95)<br \/>\nThis &amp; the next red wines are called contrast tasting: cutting the greasiness of the duck with the\u00a0 acidity of the pinot, whose flavor &amp; texture also contrast that of the Chinese roast duck.<br \/>\nCarneros Creek is famous for its focus on Pinot.\u00a0 Its lightheartedly fruity Fleur is a better match to the\u70e7\u9e2d than a regular red Burgundy\u3002Its well-oaked Reserve and estate bottlings are even better than the Domaine above, but they are well beyond our present budget.<\/p>\n<p>3.\u00a0\u5364\u6c34\u58a8\u9c7c ($11.35) &amp; 2006 Bourgogne, Domaine Cote De Beaune ($17.95)<\/p>\n<p>\u58a8\u9c7c is more chewy &amp; blander than the duck, so I chose a fuller body but lighter-palate red burgundy to contrast with it.<\/p>\n<p>Beaune is the historic wine capital of Burgundy.
