The taste that a glass of Chardonnay can acquire will depend on the origin of the grape and its method of fermentation. The wine can taste heady, or it can be light;\u00a0it can taste slightly sweetish, and in contrast, it can be slightly sour. It is this diversity in taste that Chardonnay brings to the\u00a0table, that makes food and chardonnay pairings quite a challenge. For the first course, a very strongly recommended food and chardonnay pairing is smoked salmon and this is our choice today. In general, avoid tomato based dishes &#8211; the sharp acidity of the tomato doesn&#8217;t go well with the buttery flavours in a Chardonnay. Chardonnay is a light white wine, so things like steaks and game will overwhelm the flavour. The light, fruity flavours of Caribbean cooking go well.<\/p>\n<p><strong>2.\u00a0\u00a0\u00a0\u00a0 <\/strong><strong>Riesling (<\/strong><strong>2007 Riesling Cave Spring):<\/strong><strong><\/strong><\/p>\n<p>You would be hard-pressed to find a wine that is more versatile with foods from bland to spicy, salty to exotic; Riesling wines can just about cover them all. \u00a0The key is their acidity and depth of fruit flavours. \u00a0Riesling comes in so many different styles from bone-dry to very sweet; it opens up more possibilities for matching with food naturally. \u00a0Even desserts can be charmed by a bottle of Riesling. For Asian food, they could be barbecue pork, shrimp\/chicken Chow Mein, Dim Sum, Egg Rolls, Mongolian Beef, Moo Shoo Pork, Orange Chicken, Pot Stickers, Cashew Chicken, Sweet &amp; Sour Pork and Twice Cooked Pork, Sushi or Sashimi, chicken\/seafood teriyaki or tempura. Our choice today is Chow Mein.<\/p>\n<p>When you think of Riesling wines, the first place that comes to mind (and rightly so) is Germany. \u00a0This is the birthplace of Riesling grapes and they were discovered from wild vines in the upper Rhine region way back in the early 14th Century. \u00a0You could say that Riesling is by far and away the most important grape style to Germany and production of Riesling wines more than double the next closest varietal wine. The Riesling grape is grown in the Baden, Nahe, Pfalz, and Rheinhessen regions in Germany, however, the two regions that translate into the best Riesling wines come from the Mosel-Saar-Ruwer and Rheingau.<\/p>\n<p>A quote from the well known Hugh Johnson:<\/p>\n<p>&#8220;Riesling is Germany&#8217;s great grape, and at present underrated.\u00a0It is a wine of brilliant sweet\/acid balance, either dry or sweet, flowery in youth but maturing to subtle oily scents and flavours.\u00a0 Unlike chardonnay (the white Burgundy\u00a0&amp; the white Champagne grape), it does not need high alcohol for character.\u00a0 It is very good (usually dry) in Alsace (but absurdly nowhere else in France), Austria, Australia (widely grown), Pacific NW, Ontario, California, and South Africa.\u00a0 Riesling is often called White-Johannesburg- or Rhine-Riesling&#8221;.<\/p>\n<p><strong>3.\u00a0\u00a0\u00a0\u00a0 <\/strong><strong>Merlot Cabernet (2007 Sketches of Niagara Merlot Cabernet):<\/strong><\/p>\n<p>The soft and fruity Merlot grape is sweeter, smoother, and lower in tannins. This means it blends well with other grapes and is ready to drink at a younger age. Sketches of Niagara is<\/p>\n<p>Merlot blended with Cabernet Sauvignon and Cabernet Franc. Both Cabernet Sauvignon and Cabernet Franc could dominate in flavor and texture; Merlot will soften both of them. Merlot and Cabernet Sauvignon are great match with meat and poultry dishes including roast or grilled chicken, chops (lamb or pork), meatloaf, and prime rib. The winery food recommendation for this wine could be braised ribs, spiced pork or pasta with a red sauce. Today\u00a0 \u71d2\u6392\u9aa8 is our choice.<\/p>\n<p><strong>4.\u00a0\u00a0\u00a0\u00a0 <\/strong><strong>\u54b8\u4ea8\u592a\u96d5<\/strong><strong> (<\/strong><strong>\u7d39\u9152<\/strong><strong>):<\/strong><\/p>\n<p>\u592a\u96d5\u9152\u7684\u54c1\u996e\u4e4b\u9053<\/p>\n<p>\u00a0\u8336\u6709\u8336\u9053\uff0c\u9152\u4ea6\u6709\u9152\u9053\u3002\u5564\u9152\u662f\u52a8\u611f\u7684\uff0c\u9002\u5b9c\u6b22\u4e50\u7545\u996e\uff1b\u767d\u9152 (spirit) \u662f\u8c6a\u723d\u7684\uff0c\u9002\u5b9c\u4e00\u5c0f\u676f\u4e00\u5c0f\u676f\u5730\u5e72\u3002\u800c\u9ec4\u9152\u662f\u6e29\u548c\u7684\uff0c\u5b9c\u6162\u6162\u54c1\uff0c\u65b9\u80fd\u54c1\u5473\u51fa\u5176\u66fc\u5999\u6ecb\u5473. \u6545\u592a\u96d5\u9152\u5c5e\u4e8e\u7ec6\u914c\u6162\u996e\u4e4b\u9152\uff0c\u5176\u4e0b\u9152\u83dc\u6700\u597d\u4e5f\u662f\u8010\u56bc\u6ecb\u5473\u957f\u7684\u90a3\u79cd\u3002\u5982\u76d0\u716e\u82b1\u751f\u3001\u8334\u9999\u8c46\u3001\u8c46\u8150\u5e72\u3001\u9d28\u4e0b\u5df4\u7b49. \u592a\u96d5\u9152\u7684\u6700\u4f73\u7edd\u914d\u5f53\u5c5e\u5927\u95f8\u87f9\uff0c\u5373\u53e4\u4eba\u6240\u8bf4\u7684\u201c\u6301\u87af\u4e0b\u9152\u201d. \u5927\u95f8\u87f9\u5473\u7f8e\uff0c\u4f46\u6027\u5bd2\u4e0d\u80fd\u591a\u5403. \u800c\u592a\u96d5\u9152\u6027\u6e29\uff0c\u6e29\u5bd2\u76f8\u62b5\u65e0\u75be\u60a3\u4e4b\u865e\uff0c\u53c8\u592a\u96d5\u9152\u6700\u80fd\u53bb\u9664\u8165\u5473\uff0c\u98df\u4e4b\u66f4\u89c9\u9999\u7f8e.\u00a0 \u00a0\u4f46 <strong>\u9d28\u4e0b\u5df4 <\/strong>\u662f\u4eca\u6b21\u4e4b\u9078.<\/p>\n<p><strong>\u592a\u96d5<\/strong>,\u9576\u6625\u7cfb\u5217<strong>\u9ec4\u9152<\/strong>\u662f\u54b8\u4ea8\u4eba\u7ecf\u8fc7\u591a\u5e74\u63a2\u7d22\uff0c\u53cd\u590d\u8bd5\u9a8c\uff0c\u5728\u6c11\u95f4 \u201c\u62fc\u9152\u201d \u7684\u57fa\u7840\u4e0a\uff0c\u8fd0\u7528\u73b0\u4ee3\u79d1\u5b66\u6280\u672f\uff0c\u7814\u5236\u51fa\u7684\u4f20\u7edf\u914d\u5236\u9152\uff0c\u5e76\u83b7\u5f97\u56fd\u5bb6\u77e5\u8bc6\u4ea7\u6743\u5c40\u53d1\u660e\u4e13\u5229\u6743. \u6545\u6b64\u592a\u96d5\u9152\u662f\u7d39\u8208\u54b8\u4ea8\u9152\u5e97\u4e3b\u8fa6\u5c08\u5229\u7684\u50b3\u7d71\u9152.\u00a0 \u592a\u96d5\u3001\u9576\u6625\u7cfb\u5217\u9ec4\u9152\u542b\u6709\u591a\u79cd\u6c28\u57fa\u9178\u3001\u7cd6\u7c7b\u548c\u7ef4\u751f\u7d20\u7b49\uff0c\u6709\u9ec4\u9152\u7cbe\u6781\u73cd\u54c1\u4e4b\u7f8e\u8a89\uff0c\u6df1\u53d7\u5e7f\u5927\u6d88\u8d39\u8005\u7684\u559c\u7231.<\/p>\n<p><strong>\u9ec4\u9152<\/strong>\u662f\u4f34\u968f\u4e2d\u534e\u6c11\u65cf\u60a0\u60a0\u4e94\u5343\u5e74\u6587\u660e\u5386\u53f2\u53d1\u5c55\u7684,\u662f\u4e2d\u534e\u6c11\u65cf\u81ea\u5df1\u7684\u9152\u3002\u800c\u9ec4\u9152\u4e2d\u6700\u6709\u540d\u7684\u5f53\u6570\u7ecd\u5174\u9152\uff0c\u5b83\u4ee5\u9009\u6599\u4e0a\u4e58\uff0c\u5de5\u827a\u72ec\u7279\uff0c\u9152\u7cbe\u5ea6\u4f4e\uff0c\u8425\u517b\u4e30\u5bcc\uff0c\u5e76\u5177\u6709\u591a\u79cd\u517b\u8eab\u5065\u4f53\u4e4b\u529f\u6548\u800c\u8457\u79f0\u4e8e\u4e16\u3002\u4e00\u822c\u4eba\u4eec\u6240\u8bf4\u7684\u4e2d\u56fd\u9152\uff0c\u5c31\u662f\u9ec4\u9152\uff0c\u5c31\u662f\u7ecd\u5174\u9152.
